baked gluten free pastry with roasted mushrooms, spinach, arugula, and a classic béchamel, served with a small salad of wild greens and a raspberry dressing.
Entree
crispy skin Arctic char, with pear puree, creamed greens with mushroom bacon, sticky and caramelized sweet potatoes, sautéed boo chop
with fermented red pepper

"floating islands", variety of fruit presented with an array of cooking techniques, served with meringue cookie and creme anglaise

charred leek & sun choke soup, chive oil , smoked paprika, potato puff

carrot juice cavatelli, carrot pulp crumble, carrot top pesto
Entree
crispy skin Arctic char, pear puree, candied yams, fermented chili & boo choy, dairy free "creamed" spinach with mushroom bacon
